Favorite Dish: Local Specialties in Akita:Kiritampo Stew: Typical local dish made of rice produced in Akita. Newly harvested rice is boiled, shaped around cedar skewers, roasted over a charcoal fire & simmered in broth with mushrooms, vegetables & chicken. Best eaten in autumn.
Shottsuru-Kayaki Stew: A special stew where white fish, mushroom & vegetables are simmered in a broth made from salted raw fish which is fermented in a barrel.
Inaniwa Noodles: Handmade noodles from high quality flour which is kneaded & rolled & then hung over a bar where it stretches further.
