You don't see this shop. You smell it first. Your senses are assaulted by the lovely smell of maple puffs baking. No doubt, a clever marketing ploy. Every 20mins or so, the puffs emerge, and the baker deftly injects cold cream into the bun for a delectable snack that has been kanazawa's most popular export since rice.
That's it. Just the Maple Shou. Have one as it emerges warm from the oven when the temperature hovers around freezing.
