Mino doesn't have a local delicacy (as in, a dish) but when you visit, there is a food you are supposed to eat and that is the momiji/koyo tempura (Deep-fried autumn leaves). Rarer but still festive are the momiji/koyo croquettes. In both cases the leaf does not really contribute anything to the taste, so trying it is mostly just for the experience and gets you ready to experience nature (after eating it!).
There are many stands that sell them along the lower part of the trail. One of the upper stalls was even featured on the NHK, the national Japanese TV station.
