Iwakuni sushi--a local specialty of Iwakuni--is not even available in the nearby Yamaguchi City, a mere 1.5 hour car ride away. Which is reason enough to give it a try. But just in case you need further persuasion, suffice it to say that its oh-so-Japanese composition of renkon (lotus root), eggs and chrysanthemum petals, sawara (Spanish mackerel) and aji (horse mackerel) in an unique presentation of a large rectangular block should give you the extra incentive to eat it for lunch.
Honestly speaking, I don't particularly like renkon although the renkon salad was rather delicious. But given that my couchsurfing host mother bought renkon so that she could make renkon salad for her family that night, I will vouch for the authenticity of this dish (Japanese love it!) and heartily recommend that you give it a try^^
An explanation of how it is made can be found here:

Breath-taking nature at Yamaguchi

I would consider Yamaguchi City as one of the inaka (countryside) areas in Japan. Since I have been to quite a few prefectures, nothing quite prepared me for the surprise I faced when I stepped out......
