Mekeni: Kapampangan Tocino
You'll find it everywhere in Pampanga and even outside of Pampanga, Manila, in the Visayas and even in Mindanao. Tocino is a one of the highlights of Kapampangan cuisine. Don't forget to get a pack from your nearest gocery store or supermarket. Keep refrigerated, if not, taste will take a sour note.To cook 1 kilo tocino: (at least in my own way) wash meat and cut if necessary, cook with 1/4 cup water in covered pan. When water has evaporated and contents have starting to sizzle, add 2 tbsp canola oil and adjust to low heat. Allow to cook in own oil. Turn or stir every 3 minutes for even cooking until golden brown. Do not over cook. Remove and drain.
