Cebu- The Manila of the Visayas!

Cebu could have been Hong Kong part 2! She has about the same geography as Hong Kong's. If only she was planned well, laid out well and well, a lot of money was poured into it of course! But sadly, that's just a dream most Filipinos would wish. But it's useless griping and whining about wishing her to be like Hong Kong (Which is honestly not fair to compare her too!) because even in reality- she's is 2x cleaner, less polluted and less traffic than Manila and she comes with a certain charm of her own: With antique and unique Spanish-Filipino forts, churches to the glitzy and modern shopping centers of Ayala then sadly, all mostly surrounded by shanty towns (The gap between the rich and the poor here, like most Filipino cities is so obvious) and beautiful sandy beaches just hours away (Not only developed Mactan island), still gives Cebu your true Filipino big city feel! And it gets better!...

Bacolod- A city to retire to- not visit.

"Bacolod? What will you do there? That's like going back to the boonies!" My aunt once said. Honestly, she has a point! For the average tourist, why go to Bacolod which has no Unesco-world heritage site, no mountain tribes and when the diving/snorkelling is much better elsewhere in the Philippines? 1.) To Climb Mt. Kanlaon2.) To visit off-beaten Silay3.) To visit off-beaten Sipalay4.) To visit Bantayan island/Lakawon island5.) To use as a transport hub for Iloilo, Dumaguete or GuimarasGood if you're doing any of the above! You'll have adventurous memories (especially the #1 option) that even not many locals here experienced! But what if you're not doing any of the above? You'll most likely visit Bacolod because:1.) The meat ingredients may also vary, at home we use combination of pork and beef plus innards of pork for that more authentic taste. I love the Philippines! Albeit, It is Not a shining, polished, ritzy place. It's charm is in the people! Filipino's are by nature, very polite, friendly, God fearing (only christian nation in asia!), they put family first, then God. There is a communal, giving spirit there that resonates in my heart! I get more respect overall there, than in the USA! Thats very odd? I know part of that is an Eastern* thing. I been there two times in my life, and planning a triumfant return in Febuary 2008! My first trip, aug.23,2005 was epic! First of all, then, at 39, I had never left the ground ever in an airplane! My friends. family must have though me quite nuts because the Phil's is about as far as one can fly from the Boston/ Northeastern USA!... Three planes & about 27 hours later I arrive in Cagayan De Oro, Mindanao.Where I meet my internet sweety "Mariefe" ! And I fell hard for that girl. I...

Eat some "dirty ice cream"

Whenever I visit the Phils, I have to have this treat. Ha ha ha...nix that idea you say??? No, it's not actually dirty. It's merely a name for the homemade ice cream sold by street vendors from push carts as opposed to buying it at the supermarket. The three main flavors I've had are cheese (yes, cheese), mango, and ube (purple yam). The cheese flavor is vanilla ice cream with cheddar cheese mixed in. At first, I didn't think I would like it but the combination of sweet/salty was quite tasty. The mango flavored was perfect as well. The ube is good but it's the creamiest of the three. It's a must have treat...not too rich yet not icy like a sherbet. At last, a happy middle. It's about $0.20-$0.50 and you can have it on either a cup/cone. If and when you visit the Philippines, definitely try this Filipino treat.
