    In Tagalog, "Pancit" means noodles while "Bato" means stone. So when Judith told me we would cook "Pancit Bato" I became very very very curious :0). I couldn't imagine what kind of Bicol delicacy to expect.So when we went to the market to buy the noodles, I was surprised to see that Pancit Bato looks very similar to Pancit Canton. Hmmm later...

    "Kuyog" is a local term (Tagalog/Bisaya?) which means swarm. It is an appropriate name as the fish is small...only about an inch long or half the size of an anchovy...and it comes in hundreds or thousands per harvest.Deeply fried, it is deliciously crispy. Best for "pulutan" or with hot steaming rice.This is cheap too...only 20pesos a kilo!

    This another kind of "Suman"...white in color and is cooked with cocomilk. What makes this suman different is the use of "Buli" leaves as wrapper. Delicious but a bit bland in taste. It goes well with hot choco drink, sweet yam or ripe mangoes!
