    Every morning and late afternoon, the jellyfishes trapped in the net enclosure of Raymen's Beach are collected by the resort staff. Most of the jellyfishes are discarded, buried in a pit. Some are chosen for food...yes, food! I learned that the boatmen love the "kinilaw na jellyfish". The jellyfish tentacles are removed, and the dome is diced. Then, the diced dome of the jellyfish is marinated in a mixture of native vinegar, crushed garlic, finely sliced onion, ginger and tomatoes and optionally spiced up with chili and green mangoes. They say the texture is like that of "nata de coco" and the "kinilaw" is very delicious, good as appetizer with beer or gin.

    I love any fish prepared as "kinilaw", but I haven't tasted "kinilaw na jellyfish"...I'm still thinking if I will dare eat it the next time we go to Guimaras ;))

    Don't bring in any plants into Guimaras or you'll be in big trouble. Guimaras has protected their mango produce so much to yield its fantastic size and sweetness. They're very strict into controlling any pests that may come in unknowingly thru plants.
