Yeah, as Curt stated, Sat and Sunday are the best days to go but go early. Also, depending on what you want to do and see it usually is an all day affair, the market is huge and difficult to shop and see the whole place in a day without missing something. Plenty of places to eat and drink, the food is good so don't worry about that, really good!
As fara as seeing and riding elephants, I'd say the best place for that is the Rose Garden. Located about an hour out of Bangkok, you can sign up for a half day tour, bus ride, entrance fee and lunch is included. The Rose Garden is a nice place to visit, lots of elephants, a Thai cultural show is put on for the guests and you can tour their orchid gardens. All in all not bad for a tour, or you can usually get there on your own and pay as you go, probably cheaper. And yes you have opportunity to ride the elephants.
HAVE FUN!

A visit to the Rose Garden is usually included when you book a tour to the Floating Market. It's a nice place to spend some time. They have an elephant show and a Thai village cultural show which includes scenes of a thai wedding, the harvest festival, thai boxing, thai dances among others.
You can also buy some souvenirs there, though they are a bit on the expensive side. You will find the same things at lower prices in Bngkok's markets.

We visited the Rose Garden after the Floating Markets... The Rose Garden is kind of an 'open air' museum with traditional Thai buildings, a Thai show (with dancing, elephants, sword fighting, kick boxing, a Thai wedding ceremony) and elephant rides...
We didn't go on an elephant ride here (we did at the River Kwai though) but I did sit with a baby elephant and have my photo taken for 20 baht. We also bought some bananas to feed the elephants for 20 baht...

It is not the plantation of roses. It just the name. Rose garden is located in the west Bangkok and it just 1 km from Samphran Elephant Ground, Crocodile Farm & Zoo.
In Rose Garden you will see some of the cultural performances such wedding ceremony, Muai thai ( Thai Boxing ), Elephant Show, and etc.

I visited Rose Garden with my Thai friend Chantana. Here i would like to thank her hospitality and friendship. I believe Thai people is number one because of their traditional values.
Rose Garden is a magic place. Away from crowded city and busy daily life, it is warm with its flowers, trees and lakes which are impressive.

Spend an afternoon at the Rose Garden. Located about an hour east of Bangkok, it's your typical tourist spot that includes restaurants, a hotel and a lake. It also boastes a live show featuring Thai dancers, kick-boxers,and elephants. Just outside the show is a place where for $1 you (or your children) can ride elephants. For another $1 you can have your picture taken with a baby elephant that just happens to enjoy giving kisses! A Mattison Christmas card picture is born !!!
