Chiang Mai Thai Cookery School is the first cookery school set up in Chiang Mai and comes well-recommended by Lonely Planet, Let's Go, Rough Guide, Frommer's and Stefan Loose guide books

After attending a 1-day course, you can certainly see why. The school is managed by Sompon Nabnian, and his English wife, Elizabeth, as well as their helpers who are all very engaging and speaks good English.

There are altogether 5 variations of the courses and a different course is taught each day in a cyclic manner. Thus, there are 1, 2, 3, 4, and 5 day courses offered and do check the schedule at their website before signing up so that you can choose the dishes you would like to learn to prepare.

There are 2 premises you can attend the lessons and they include the house of Sompon Nabnian (at the outskirts of Chiang Mai) or at their restaurant (The Wok) within the old city. As I was somewhat pressed for time, my buddy and I attended the lessons at their restaurant, which is run by their helpers.

The lesson started by a visit to the market to learn about the ingredients followed by various demonstrations in their classroom. After each demonstration, you then return to your own cooking station to prepare the dishes. The preparation methods are clearly explained by the competent instructors and the delicious dishes are really easy to prepare. But the results are really professional and will certainly impress your friends!

Cooking school: A brilliant cookery school

I try to do a cookery class on each holiday, and do my research before hand. I love thai food so much it was an important part of the things we wanted to do. I short listed 6 places including Chiang Mai Kitchen Cooking School, Baan Thai, The Four Seasons, Chiang Mai Thai Cookery School. But I wanted to see them for myself to make sure they were what they claimed. I visited most of them, and after one day couldn’t find what I wanted, and it was by pure chance that the Rachamankha Hotel recommended Kao Hom.

My criteria included…as we were going in April their hottest month, I wanted to ensure we weren’t going to melt whilst cooking. You hear about Bird Flu, so I wanted it to be clean. I didn’t want to be part of a large group, and wanted to be taught by a Thai person, who spoke good English. Whilst I wanted the best, I didn’t want to pay the earth, as some charge $150 a day and others pad out the time with a trip to a market. I know this was asking a lot, so I would have compromised. But..

Kao Hom satisfies all of this and more, better than I could have dreamed of. Image cooking open air, on like a large veranda, which is shaded by some trees in a beautiful garden. You over look an immaculate herb garden that even Jamie Oliver would be proud of. Your very polite chef teaches you to cook exquisite food, at your own pace, whilst more mundane tasks are carried out by 5 helpers who ensure that your time and efforts are focused on learning, cooking and eating. What seems to be unbelievable food, that you hope to get from the most expensive and best restaurants, turns out to be what you have just cooked!! Other cookery schools can learn from this experience, both in Thailand and all over the world. If there was a star rating for cookery schools, like there are for hotels, this would be one of the very few 7 Star hotels. Tell your friends but not the but the mass tour operators, as Tim will only deal with small groups.

We spent 3 evenings attending this excellent "culinary treasure" cooking school. Our hostess with the mostess, Kanchana (AKA Tim) was a lovely patient lady, with excellent English and a great sense of fun. There were plentiful supplies of iced tea and water, and lovely coffee at the end of the meal.

The environment was spotlessly clean - all prepared outdoors in a beautiful gazebo style cooking area, with plenty of room and assistance. All ingredients were brought to the table and used items were spirited away by the helpful and committed staff. We enjoyed the company of companions on the first two nights, and had a "private lesson" on the third, and were able to cook the foods we specifically requested.

We learned about the foods, preparation of ingredients, history of the dishes, and ended up very impressed with what we could cook with supervision. Freshness of ingredients, direction about how best to store, alternatives if the Thai ingredients not available at home, and every attention to presentation, all enhanced the learning and value of these classes.

The evenings always ended with a candlelit outdoor dinner, dining on our final courses, with great company and a laugh.

Tim had beautiful hand embroidered starched (with rice water) aprons, which had been made by her neice - we bullied her into getting some extras and selling us 2 as mementoes of our classes - and motivation for us to continue the good work at home.

We were collected from our hotel and returned at the end of the classes.

I highly recommend this cooking school - as a memorable and great learning experience. We found that doing the afternoon-evening classes worked perfectly for us - as we still had the day to do other things, and we weren't slaving over a hot wok in the heat of the middle of the day - I say "slaving" tongue in cheek!

If you are getting around Chiangmai, there is an activity that you should not miss to do - learning Thai cooking. There are many cooking schools here, about 20 schools - I guess - from the signs by the roads and that posted on hotels' and guest-houses' boards. The course fees are about US$ 17-25 for a full day course from 9:30 am to 4:30 pm and about US$12-14 for a half day course.

I found an interesting cooking school in town. They offered a private course that limit only 1 or 2 students per class so that the teacher can take care of every steps in your learning. It is a real hands-on practice and you will be full all day. Of course, the fee is a little bit higher than other schools' that have big groups of students, but it is reasonable price when compare with great experience you will get.

I recommend the half day course. It takes about 4 hours including market tour. I think 3 dishes per course are enough for my learning cooking in one day otherwise I would confuse a lot about their recipes. They gave me a cookbook which is very easy to read and follow. If you have time, the full day course is not bad. It takes about 7 hours, for your best lunch and dinner in Thailand. They allow you to invite your friends to taste what you cook and it is free of charge.

Their school may be not beautifully decorated like the other rich schools, but it is very cleaned and friendly, caring atmosphere. Most important is that all your dishes are very delicious with authentic Thai taste. Don't forget to learn their Pad Thai ( Thai-style Stir-fried Noodle ), it is the best. They have their own cooking secrets for every dishes.

They are 'My Mom's Kitchen Thai Cookery School'.

If you love Thai food, be sure to spend at least one day at the Chiang Mai Thai Cookery School.

We opted to spend a day at the home of Sompon and Elizabeth Nabnian, making panaeng curry paste, along with five other delicidous dishes. The very reasonable price of about $20 USD included transportation from the hotel, instruction and more food than we could eat during the full day class.

We learned the basics of Thai ingrediants and cooking methods and really enjoyed chatting with our fellow "chefs" as we cooked and sampled.

The well-done recipe book has already proven to be of value since my return home - I used it last week as I shopped and cooked for a Thai dinner party. Friends declared the curry a great success!

This cookery school isn't the cheapest in town but it was excellent value at 800bht becasue the facilities and quality of the teaching were outstanding. The day begins with a trip to the market to make us familiar with the local produce. It was also an opportunity to understand what vegetables people in the west could substitute for traditional ones we couldn't find. Once we were in the kitchen everything was set up for us. There was no chopping or cleaning to do just cooking listening and enjoying!

The tutor was excellent and the level of english (even though he pronounced mushrooms as MUSH-A-LOOMS! which I found very amusing) was more than adequate. More importantly our tutor knew what people had in ktichen's in the west, what we could get from supermarkets and the different terminology for vegetables and appliacnes in different countries. We made a range of dishes of which we ate some on site but took most home. I was very surprised how good the food turned out. We were given a good cook book and some spice to take away with us. We were told that we could contact the school at any time afterward if we got stuck at home which I found a nice touch.

If you're in Chang Mai then this is a premium cookery course that is excellent and a great investment. For months afterwards you'll be cooking good thai food.

Visit the Kao Hom Cooking School for a wonderful time learning and eating fine Thai dishes. Attending a cooking school in Thailand should be on your lifetime "to-do" list!! Imagine, cooking al fresco with fresh ingredients some hand picked by the chef/our teacher from her garden.

Two cooking areas, ours was outside with only a roof. Lush vegetation surroundings added to the experience. After watching the teacher each student sitting at their individual preparation areas would prepare the dishes under her supervising eye. Numerous assistants did all the prep work and each ingredient is laid out in small covered bowls. Then it was time to stand up and fire up the individual woks.

Of course after you prepared these dishes you have to eat them. I have never tasted such amazing Thai food!!! I am a great cook!!! (In my humble opinion)
5 hour course where we learned to make spring rolls with honey chili sauce, tom yam goon, pad Thai, and chicken with cashews. Transportation to and from our hotel was included. Recommended by Lonely Planet and a highlight of our trip to Thailand.
