Luggage and bags: A backpack or a day bag

Clothing/Shoes/Weather Gear: It's a little chilly in Sapa in the early morning and late night. So if you're not so used to a cool weather then you'll probably want to bring a light jacket with you. But I'm sure you will need more than that if you go there in the winter.

Photo Equipment: I saw one photo shop there..it should be fine.

Camping/Beach/Outdoor Gear: You will go trekking in Sapa. Bring the trekking gear like a pair of comfy shoes, a hat, and sunblock.

Miscellaneous: Mosquito repellent

Luggage and bags: Pack as light as possible. Ask if you can leave most of your luggages to hotel. It makes things more easier.

Clothing/Shoes/Weather Gear: If you want to explore surrounding areas, dont forget GOOD walking boots! Otherwise your legs are killing you after few hour walking on ricefields and climbing countless number of stairs. Blister plaster is excellent invention, too.

Photo Equipment: Lots of film or huge memory card(s). Landscape painter would be amazed from all that beauty. Sapa is absolutely the most picturecque place in Vietnam.
