Outback Characters.While bicycling the Australian Outback I was constantly meeting the numerous locals or people who have made this part of the world their new home. Its a hardy or eclectic type of person who will make the choice between the Outback as their home from the city. It can be a lonely place out their in the Outback for some, but for many it is a place that recharges the individual's soul and shapes the character in all. The man pictured here is one such person who had made the Outback his home. His Dingo-cross dog was as much a character as he was, it was a warm and welcome feeling to meet these two, while bicycling with my cycling companion Carsten north of Coober Pedy. It was taken right at the 9600Km long "Dingo fence", this dog pictured had the rights of way.

A True Australian Christmas Cake Recipe Ingredients 225g/8oz plain flour1/4 tsp salt1/2 tsp mixed spice1/2 tsp ground cinnamon200g/7oz butter200g/7oz dark brown sugar2 tbsp black treacle1 tbsp marmalade1/4tsp vanilla essence4 eggs, lightly beaten800g/1 3/4 lb mixed dried fruits100g/3 1/2 oz chopped mixed peel150g/5oz glace cherries, halved100g/3 1/2 oz blanched almonds, choppedbrandyTo Decorate the Cake:200g/7oz marzipan1-2 tbsp apricot jam, warmed Royal Icing3 egg whites600g/1lb 5oz icing sugar, sieved11/2tsp liquid glycerine - optional1 tbsp lemon juiceAs this recipe wouldn't fit on one page refer to the next tip - part 2 - for mixing ingredients and decorating the cake.

Method 1. Heat the oven to 150C/300F/Gas2. Grease a round or square cake tin, line the bottom and sides with baking parchment.2. Sieve flour, salt, mixed spice and cinnamon into a bowl. 3. Cream butter and sugar in large mixing bowl, then mix in sugar, treacle, marmalade and vanilla essence until light and fluffy.4. Mix eggs a little at a time into the mixture adding a tablespoon of flour mixture with the last amount.5. Fold in remaining flour mixture until well mixed, then mix in the dried fruit, mixed peel, glace cherries and almonds.6. Turn the mixture into the prepared tin, make a slight hollow in the centre.7. Bake in oven for 3 hours, then test with a skewer. If not ready bake for another hour testing every 20 minutes until skewer comes out clean.8. Remove from oven and leave to cool in tin for 15 minutes.9. Turn out on to a wire rack and leave to cool.10. Once cool, make a few...

Proper Vocab Down Unda!

One will immediately note the haphazard abbreviaton that occurs every other word in Australian vocabulary. Most words are chopped in half and slapped with a y sound ending such as: mossie (mosquito), brekkie (breakfast), Chrissy (Christmas), sunnies (Sunglasses), dunny (bathroom), and even Brissy (Brisbane).Lesson #2 in Aussie Vocabulary is what words NOT to use. First, one does not root for the home team in Australia. To Root is to um, have sexual relations. You CHEER for the home team. Additionarlly, Fanny is a rather crude description of the female sex organ. Unlike in provincial America, it is not your butt.Once you've mastered these skills, you can communicate with the natives sans hand gestures and grunts.

Here in Australia it is not customary to leave a tip. It is not expected and you will not be made to feel awkward if you don't. I have never tipped someone yet! Our waitresses/ bar staff are paid a better wage than most from overseas so tipping is not a part of their income. I'm sure it would guarantee the best sevice if you did, but I don't really think it's necessary.

Aussies drink beer and we're really good at it!And we like it COLD!, never warm. You can buy it in 'stubbies' [ pictured ], cans or tallies [ large bottles ], or you can go the hole hog and get a keg.You can buy it over the bar in pubs in different sized glasses. The glasses are always chilled. A pot of beer is about $2. Look out for 'happy hours' in pubs when they sell $1 pots.

I was going to say that all Australians love vegemite, but sure as eggs someone will tell me they hate the stuff. So instead I'll say that MOST of us love it!As a sandwich spread I suppose it is a little peculiar. For a start it's black which toforeigners would seem odd. It's taste cannot really be compared to anything that I can think of. Salty, tart maybe a little like molasses. The trick is to only use a little on your toast etc. Don't slap it on like peanut butter or jam.Try it...you'll hate it!...lol
