Visit the school on Abaiang
As you might expect, there is just one school for all ages. But this school is large, and attracts students from other atolls as well. I had a tour and a talk with an Australian schoolmaster there.

Biking on North Tarawa
Atolls are a great place for a bike ride - the southern part of North Tarawa has no cars so biking gets you a lot further to see more. Good news - atolls are flat so it makes riding easy. Bad news - you come to a channel of water to cross about every mile or less. I would not recommend it for South Tarawa though as the drivers are pretty agressive.

Take Air Kiribati between atolls
If you dare.... one of their two little planes crashed. And when I was on Air Kiribati, there were 3 more passengers than seats - passengers were sitting in each others' laps ! Here is the view of Marakei atoll from the air.

Snorkling
Kiribati is a chain of atols and, as such, they are mostly reef. The oceanside reef on Beru went out for what seemed like miles but was still only less than neck deep... You can just float around looking down at hundreds of species of tropical fish... but wear shoes since the coral is sharp and will cut you up. Also watch out for the drag... the water seems very still, but subtle wave action is actually pulling out out to the ocean.
