As you might expect, there is a great selection of delicious French cuisine available in New Caledonia - what a treat after the Anglo-Saxon introduced culinary horrors in the rest of the region! As you might also expect, it all comes at a price - good French restaurants are out of reach of budget travellers, though cheaper ones run by Vietnamese in Noumea are more affordable. Also affordable are the fantastic sandwiches and French bakery products sold throughout urban areas, and the ubiquitous, cheap baguettes and paté available in every grocery store in New Caledonia are a self-catering budget traveller's saviour. Traditional Kanak food is similar to that of the rest of the South Pacific. It is based on tubers and local veggies, with meat and seafood if available, and is prepared in an earth-oven. The resulting dish is called bougna. Unfortunately, it is only prepared for special occassions, or - at a very high price - for tourists on order. Everyday Kanak food has been somewhat influenced by French cuisine and makes use of rice and baguettes. Price and atmosphere are excellent. It is open all year and is highly recommended. They have the most unusual vietnamese come cantonese come chinese menu, and everything is freshly prepared on site.
