The Noumea markets are brilliant for catching up with friends, finding original and special New Caledonian food and crafts and it is a goldmine of amazing objects and people. You could stay there for the entire time it is open just watching people come and go as well as inspecting the goods for sale.
What to buy: Fruit & vegetables- locally grown-bananas, sweet potatos, custard apples.
A hearty espresso or beer at the bar/cafe located in the heart of the market
Fish- an amazing array of fish and seafood
Gifts- soaps, trinklets and handmade jewlery and crafts
Clothing

Souvenir shops in Noumea usually sell stuff mass-produced in Asia or Fiji.
The Kanaks do produce some interesting items themselves, but telling it apart from the copies made elsewhere can be a challenge.
As usual, the best way to do it is to buy at the source. The honesty stalls found along the main roads of North-East Grande Terre often sell local crafts for very reasonable prices.
Expect to find soap-stone and woodcarvings, and basketware.

What to buy: Take home some stunning printed fabric for a doona cover or cushions as a reminder of your New Cal holiday.
The hardest thing will be choosing which bolt of cloth to souvenir when there are virtually hundreds to choose from.

I found it an experience just to visit a couple of French/New Caledonian supermarkets, to see the different sorts of food they have.
This was the first place I'd ever seen a crayfish in an open freezer - before I'd only ever seen them behind glass in a supermarket.

Jade is a popular item (but quite a lot more expensive than I was led to believe in brochures).
Also you will find shell jewellery, brightly coloured clothing, t-shirts, and lots more.
