Crime isn't high in New Zealand. As with any country this doesn't give you the right to flash your money around....the wrong type of people will notice. Just be careful, keep away from unlit areas....just the usual stuff.
As you drive around NZ you will notice paddocks with thousands of sheep. They are fine when they are in their paddocks but when the farmer wants to change paddocks watch out! Sheep have right of way!
Make sure to fill up your fuel tank in time. This may seem a lousy kind of advice but in less populated areas you may have a hard time finding a service station when you urgently need one.Related to:

DON'T UPSET THE PIG
This has to be the nastiest pig I have ever laid eyes on.

beware of the seals
this actually happend in the south island. while walking at the beach, we saw some seals and they move really fast so do not get in their way and these animals are huge ! you have been warned !
Beware the fearsome sand fly. Known to feast on the flesh of unsuspecting tourists...
My ankles looked like they had chicken pox after a few days on the south island......

The people there drink a lot of beer (not as much as the Aussies). I saw this ad in a bar in Queenstown. It describes the attitude of the travellers in NZ quite well :-). I loved it.

Be carefull with the sun. Because of the thin Ozon layer you'll have to put on a good UV-sunblock, even when it's a cloudy day.

Be careful of sandflies when you stay on the beach and near them. These annoying little mosquitos come by thousands during the whole day... so... use a lot of repellent if you need your blood !! :)
