This is a beautiful beach. It is called Cemetary Reef Beach. You have to walk through the cemetery to get there, but it is truly beautiful. It isn't crowded, but don't expect amenities. Bring your snorkel gear and head out to the awesome reefs. Ask a local for directions. It is along 7 Mile Beach.
A ride around the island will take you to some interesting spots. Here is a hole in the limestone that causes water to shoot into the air. It's on the east side of the island.
The Cayman Island turtle farm is an interesting place to spend an hour or two. There's nothing else like it and kids love it.
