 hombre, you left the cage open again! by alza On my island is Kuna Yala, the men were fishing all day in their dug-out canoes. Our sailing gang was either snorkeling nearby or doing hard time trying to tie MY hamac to two palm trees. Auntie Kuna had to intervene with that last one, the guys just had no idea... Usually, we gathered around the long, shaded table on the beach and drank coconut water while talking excitedly of what WE saw that surely no one else had found! We also spent lots of time climbing trees with monkeys on our backs, or trying to look like natives, especially when someone took out a camera. I was intrigued to see the cousins Rodilio and Gil in the background, walking back and forth from their canoe to the beach. I walked over and asked them in perfect Kuna language, with hand signals and eyes a'poppin, why they were laughing so much. They proudly showed me The cage, full of spiny lobsters, right at my feet in the sea. They sold them for almost nothing and I ran back to tell the skipper, who took care of all our meals with his girlfriend's help. Would you believe Skipper said he had chicken on the menu that night?! Said "These guys would do anything to make a buck. Don't worry, we have enough food already. I'll get on the dinghy and fetch the chicken on the boat." Cripes! what a disappointment! The Kunas were so kind to us during our two-day stay on their island, I would have bought their lobsters even if I'd been allergic to seafood!

El Trapiche specializes in the best of Panamanian homestyle food serving breakfast, lunch and dinner. Portions are generous and the restaurant is nearly always packed with locals- a testimony from Panamanians on just how good their Panamanian dishes are. you will love it.

 rlmn'05 by navyisland A real secret, hidden away from the noise it is in a house from the last century. Homemade bread and pasta, crabs flown from San Blas Islands. Really the prettiest restaurant in Panama. Ceiling fans and potted palms. As a a frequent traveler to this city I was thriilled when this place opened. It is a see and be seen place for Panama's elite (on one night I saw two ex-presidents and former Miss Universe). Local paper gave it three stars and and excellent review.

by Ekahau Sancocho de Gallina (Chicken Soup) Ingredients chicken stock (1 and 1/2 qts.) 1 yucca, peeled and cut into 1"x1"x1" pieces 2 plaintains, peeled, halved, and sliced into thirds longitudinally 2 red potatoes, peeling optional, cut into chunks 3 whole chicken breast, skinned and quartered with bones left on. juice from two lemons cumin, 1 tsp scallions, 1 bunch cilantro, 1 bunch roux (2 T all-purpose flour and 2 T buter, mixed and microwaved for 30 seconds into a yellowish sludge) salt and pepper In one cup of chicken stock, simmer scallions, cilantro, and cumin for a few minutes. Set it aside till cool, then process it into a smooth, green-colored flavoring element to be added to the final soup. In the remaining 1 and 1/4 quarts of chicken stock, simmer the quartered, skinned chicken breasts. Particulate scum which floats off the chicken breasts as they start to cook may be skimmed off with a ladle, and discarded. The chicken will take about an hour to cook. As the chicken starts to simmer, add cut-up, peeled yucca, and cut-up potatoes. You may continue to skim off scum after the yucca and potatoes are in the soup. About a half hour from completion time, add cut-up plaintains. Plaintains are more delicate, and require less cooking time that other elements of the soup. 10 minutes before completion time, add the processed scallions-cilantro-cumin, and the juice from 2 lemons. Add roux to "bind" the soup, stirring to mix it well. Make sure the potatoes and yucca are cooked to softness, and examine a piece of chicken to check for doneness. If overcooked, the yucca, potato, and plaintain disintegrate, but their rich flavors remain. Add salt and pepper to taste. Leave a Comment

Mmmm! Delicious, succulent, alluring chocolate strawberries. Unforgettably delicious! Skewers with pieces of marzipan, brownies or strawberries dipped into chocolate and coming out with a yummy yummy coat of it!!! My steps always took me to the shop without even thinking of it. Then I brought my friends, too, and was really happy to initiate them to the passion of chocolate and strawberries! Try it even if you are not very interested in sweets. Well, I am a chocomaniac, anyway... One stick 2$ or 2.50$. Strawberries with cream or icecream 2.5$. It has some simple dishes for real food, like soups, meat delicacies, chicken, nice salads, fresh fruit juices, coffee and tea, children menus. Try thier Yuca pâté: looks like a chicken pie but Panamian style. Make reservations otherwise you will not have a place to sit in the show room. Show on Tuesday, Thursdays, some Fridays and some Saturdays. Its values are: Excellent food, flawless service, superb taste, warm candle lit atmosphere and a breezy balcony with view to the main street. I met the French Canadian owner who pointed out to me that he cares for quality. I heard they sometimes stay open until very late if the clients are in the mood! Among others I remember the delicious fish dishes including lobster and salmon. There are also Thai, Lebanese and Mexican dishes. Try it!
