Great Exuma Island Restaurants

The Bahamian conch seems to be the national dish or at least the main ingredient and few bars and restaurants in the island fail to sell conch salad, cracked conch, conch fritters or conch chowder.
The best known in the Exumas is Big D’s Famous Conch Spot, a wooden shack on a mile long beach near the north west tip. Just as everyone goes to the Two Turtles on a Friday night and the Eddie’s Edgewater Inn on a Monday night for rake’n’scrape music (a traditional sort of skiffle band using an assortment of ironmongery for musical instruments), so half the island goes to Big D’s on Sunday for conch salad and a Kalik beer. The secret? “Freshness makes the difference, buddy,” said Big D, pouring me a drink.
Most days, he takes his boat out to the Brigantine Banks to fetch supplies; most evenings and weekends, he cranks up the music and serves fresh conch to his regulars and visitors. As we discussed the finer points of the conch he also revealed he was considering closing for a couple of weeks later this month (July 2004) to make changes. “I’m thinking of extending this deck out to here and putting a roof over this area here.” If you've been, tell us what it's like now...
