Paling in't groen.: Eel in the green.

I like to eat this dish once in a while.Eel is a fat fish. It is hacked in pieces of a few centimeter. It might not look to tasty , but the fish is served in a vegetable sauce.Eel is quit a fat fish , if it is prepared rightyou can just take a piece in you mouthand let it melt....that is how I eat it...But feel free to get the meat from the spineyour own way.It is so that most restaurants have their ownrecipe for preparing the dish.A little village like 'Mariekerke' is well knownfor their eel-festival! (Link to my vt-page))In general the sauce contains , parsley , sorrel , chervil , white wine , onions , tarragon , lemon,egg yolk. But the recipe differs , as I said fromplace to place. Served with bread...most tasty.Prices 12 euro up to 20 euro.

Nobody seems to like this beer. lol.I don't know a thing about beer and I only drink a few very special ones....but I couldnot resist buying this one to try it out.It is beer but with a chocolate flavour , aroma.It is from brewery Huyghe in Melle. They brewtheir beer since 1902 and Belgians will knowthem by their logo. The pink drunk elephant.But chocolate beer isn't a hit and you willonly find it in specialized shops. More a gadget. Have a look at this site ,for the revieuws of the experts. Very lowratings indeed.

Some things seem to stay around forever.As a kid I used to eat this at home. A thin layeron bread and then served with cruispy bacon.We are talking 'luikse perensiroop'.A jam made from pear. The pear get cookedso long it falls apart and turns black.Preservatives and sugar are not added. Ithas that naturally. Quit tasty. Something specialfrom the city of 'luik' or 'liège'(liège is the local name - it is in the French parth of Belgium).Maybe they serve it in the hotel in these little containers. Try it , maybe you'll like it.The colors and the design of the containerhasn't changed since I was a kid , the taste either.

I don't think Belgian people care if the world calls them french fries. Belgium is the land of thefries. We even got about 5000 'frietkotten'.A frietkot is a place where they sell fries...itcan look like whatever. From a caravan , a chalet , a hand made space. You can find them on thesquares , near the road...Wherever? Btw we like them a little bit thicker.They need to be baked 2 times at differenttemperatures. In some restaurants they evenbake them 3 times. One time in oil with herbs. CHARLES BAUDELAIRE writes in 1861 aboutthe masterpieces of Belgian cooking.He loved the fries he went eating in WATERLOO.VICTOR HUGO advized him with the words'Blond and crispy'. But how did they got their name?Simple , the americans came to help Europeduring world war I. They were on Belgian and French fronts and got to know fries.In their opinion the Belgians and the French only spoke one...

It is a dish from the countryside andcan be found all over the country.In the south(ardennes) you will be more likely to findthe 'luikse pens' or 'Boudin de Liége'.It is with spices in it...As I was little my mum used to bake them on sunday morning and we would eat themwith crusty little breads.Every butcher has it's own style of making them , some dry , some thick , some with extra spices.People at the office where I work bring them for each other. (but that is not a common practice).The black ones are made with blood.If you are at a 'Taverne' and they are on displaytry them. They are very filling.They are served with mustard or withapple sauce like I prefer them.You can also find them at markets , baked and served on bread with mustard.(flemish names are Beuling , witte pens , ..)

They are from just over the border.The 'Zeeuwse mossel' is a beloveddish for the Belgians.They are breeded in th Netherlands but muchmore popular in flanders.Somewhere in the summer the season starts.The date differs year by years.Long rows at the shops...it is some sortof madness. In Antwerp they even renta helicopter to bring them and to have them first.Belgians talk about them as if it is wine , it is a good year or a bad year.We eat so much of them that prices mayget really high because there are so littlethat year. And we are talking tons then.How do we eat them?They need to be alive up to the moment theyget cooked. They get boiled really short andthey are ready when the shells open.Never eat a closed one or try to open one , they should come out easy.In the picture you can see them cooked 'natuur'only some vegetables are added ;like onion , sellery and prei....But most restaurants...

Belgians love greay shrimps , they are a ral delicacy.These little animals live in the north sea.They first get cooked and then skinned.That isn't an easy job and if you've never donethat before , it is a hard job and takes long.By that , you also know the reason why they areso expensive. Labour in Belgium is expensive.One kilo will easely cost 25 euro.The ones you will find in the supermarketaren't skinned in Belgium. We bring themto north morocco where they get skinned inlarge factories and the people there gotpayd per weight they've done.That makes them also a little unhealthy.The preservatives used are. Do the Belgians care?What do you think.In some restaurants they get skinned by hand.But I'll hope you'll have a mastercard then.In some fish shops you can buy themfresh , cooked , but not skinned , less expensivebut a hell of a job. Belgians love aspargus.They breed them like they are best ,white and long , it takes a lot of effort.You need to make the soil higher abovethe root , so it can't come above the soil.That is the trick not to let them turn green.They also need to be breeded in verythick clay-ground. Then they are best.All of that needs to be done by hand , that makes them rather expensive. At the beginning of may they are ready , and saint-Jan at the 24th of june decidesthe season is over.We eat them in many many ways.In some restaurants you can eat a whole menu.Soup , a le flamande : with eggs or like in the picture with salmon. Often used in salads as well. Just try one...maybe you'll discover a new favorite dish.

A Belgian traditional you will find often on themenu , also served as a snack...'Schotel Américaine' 'assiette Americaine''Américaine preparé' is mixed beef.Everybody adds it's own ingredients and spices.Often a special mixture is referred to as'made by the chef'.It is popular put on a toast , then it iscalled 'toast cannibal'.You can have it in the take-away sandwichbar ...But in a restaurant it is served with friesand a lot of garniture. A salad for sure , mayonaise and pickles , onion ...etc.Prices between 8 and 12 euro.Depends on the quality. Keep one thing in mind , it is raw meet. It should be eaten fresh , never buy some at the delicacy store , the supermarket or the butcher to eat it...later.Eat it fresh.

'Belgian waffles' are the best!There is no harm in telling this.From all the sorts of waffles the 'Brussels waffle'is the queen of waffles.Some tips?A Brussels waffle is always eaten fresh baked.Never accept a warmed up one and for surenot one the put into the microwave over.It is a classical dessert and Belgians like toeat them with all sorts of garnitures.In the picture you can see my personal favorite..'Brusselse wafel MIKADO'meaning with icecream , wipped creamand with real melted hot chocolate.Where to find them?Often grand brasseries and more poshgrand cafés have got them on the menu.You can find some nice one on my Antwerp page. And last bot not least , if you visit a'kermis' or a fair with attractions , seek forthem there.
