It is an easy drive from Odense to Egeskov : At first it is best to head for Kværndrup and from there you will find a lot of signposts for Egeskov.
In Egeskov you will find a giant carparking with about 1400 parking-spaces for cars, buses, motorhomes and even cars with a caravan will have no problem to find a parking-space there.
Unfortunately the parking is forbidden at night there, so it is no place to spend the night inside your motorhome !*

In case that you travel through Danmark by train: Ringe is a village close to Egeskov and this seems to be the closest train-station to Egeskov. From there you might take a taxi or the local bus, or a walk of maybe 3 km.
Below you will find a web-link to the trainsystem of the Danish Railway!
And there is Fynbus as well, their
busline 603 is going Kværndrup - Egeskov - Trunderup*
and this is another link to a
Attraktionsbillet to Egeskov and other tourist-places in Fyn
unfortunately their text is only in danish !

Getting to Egeskov is not the easiest thing in the world by public transport but it can be done as long as you plan it (see sites below). The buses between Nyborg (where there are trains) and Fåborg stop here as do buses from Ringe (south of Odense) to Svendborg. Summertime, some buses make the detour into the castle gates when you can do a search for "Egeskov Slot" in the travel plan. Otherwise, you have to get off by the main road in which case you search for "Egeskov / Landevejen". This will bring you almost as close actually, so no need to worry about a ten mile walk. NOTE that you must not search for only "Egeskov" since that will result in times for a different village on Jutland! Check to see that your bus passes nearby Kværndrup one way or the other and you know it's the right one.

Very good public transport system, i.e. bus available from Odense. The long-route bus-stop is just by the Odense rail station and bus stops en route to Svendborg and other destination. Collect the bus schedule from the rail / bus stop to plan your visit. If you are into exploring some other places in the same day, buy a day-ticket (Dagbillet) at the bus which is valid until midnight no matte when you buy the same day.
