Around the centre, you’ll find the ramparts with several towers & bastions, mostly built in the 15th century. You can walk along the ramparts, either on the inner side or the outside. We walked part of it, and especially the inner way was pretty up and down. There are several signs that give you information on the different towers that you are passing, but it’s only in French.

The charm of Beaune lies also in its ramparts which go back to the 15th century, the towers of the 16th c. and the polygonal bastions of 17th c.
The ramparts remained on about 3/4 of the perimeter of the town and are accessible for walking.
The photo shows one the 4 big towers.

The "Beffroi" or Clock Tower of Beaune is a rectangular tower of six levels with a roof with four angles built in the 13th and 14th centuries. The architecture is of Flemish influence. It is the oldest clock of Beaune since a clock was installed here about 1400. The weights of the clock went down to the 2nd floor.
The worn clock was replaced in 1861. The tower was on several occasions restored during the centuries. It is classified historical monument.
I am unaware if the interior can be visited.
Beaune should be visited by foot. It is not that big, and is the best way. You can actually walk all around the town and see many parts of the original wall. The entrance 'St Nicholas Gate' leads into Liberty street, which continues to the centre of town.
Most sights are within the 'walls' of the town.
