If you are staying at one of the Disney Hotels many of them have swimming pools and gyms. The New York Hotel has an ice skating rink and tennis court.
Disneyland Paris also has its own Golf club. Three 9 hole courses, which can all be used together or seperately. If using the golf course is in your plans to Disney it is worth checking they do not have any competitions on before you book. For up to date prices check out the website below.

The open air ice skating rink is opened in Winter, als soon as the weather conditions allow it.
There are some opening hours in the afternoon, but I noticed that there are more skaters and more ambiance in the evening. It's no fun to skate all alone...
