Louis Blèriot - Historical fact

Louis Blèriot changed history; he done this with his pioneering flight across the English Channel on Sunday July 25th 1909. He self-designed & self-made the monoplane model XI in which he made the flight with. He started off at dawn's first light from Sangate, near Calais and was flying at just over 40 miles per hour and 250 feet up in the air. Down below him, on the Channel, was his wife Alicia, on the navel ship, 'The Escopette.' This ship was supposedly escorting Monsieur Blèriot across the channel too. Blèriot had soon left his wife and the Escopette behind him and crash landed near Dover Castle, damaging his propeller and undercarriage in the process. His marvellous endeavour won him the coveted Daily Mail prize of £1,000 for being the first flight across the channel.

hmmm, yummy scallops. Some years ago I bought a batch at a French country market and having no recipe at hand, I made up the following. It's done in literally 5 minutes. - heat a bit of olive oil, quickly fry the dried off scallops. Remove scallops, keep them on a warmed plate. - if necessary add a little oil to the same pan, infuse some crushed garlic in it for a minute, then remove garlic. - take a fork, and stir in a small tin of tomato paste, a splash of white wine and good dollop of creme fraiche. Let it reduce until a nice light sauce. Add scallops, finish off with a turn of the pepper mill. Serve with crusty white bread because you really want to soak up that sauce! - Done !

It makes all the difference.Remember to taste every step of the way and adjust seasoning when necessary.I believe that a really good stock and the goosefat are essential to this dish. Using the authentic beans (haricots blanc) from southern France won't hurt either :-)Serves four.500 gr. white beans, soaked overnight in water. Throw out water, blanche them 5 minutes in fresh water, strain and set aside.Make a strong stock with1 leek, 1 onion stuck with 5 cloves, 1 celery stalk, 1 large carrot, 3 bayleaves and a bunch of thyme sprigs, 1 pig's trotter or heel, 1 big sparerib, 200 gr. smoked bacon, cut in pieces.Salt and pepper to taste. In days of old the bar tabletop at the local Tabac Bar Bistro was covered with galvanized iron which had a zinc coating. Hence the term: “Au Zinc” – meaning: “to stand at the bar”.Lots of establishments in France put surcharges on their prices for service at table ( even more if the table is on the footpath). As a result of this custom you will see the “locals” gathered around the back bar of the pub/tabac standing, drinking and/or eating. It saves money!There are many postings on VT Forums about “wanting to mix with locals”; “meeting locals” even wanting (the impossible) to “look like a local”. Goûter, literally meaning "to taste" is the late afternoon snack that French children have when they get home from school to "keep them going" until dinner. It can consist of pretty much anything: a bowl of cereal, a pain au chocolat or a croissant, some bread spread with Nutella, cake, biscuits, crisps, fruit..... whatever!
