Having lived in Toulouse for two months and samples crepes and galettes all over town, nothing compares with La Regalette. Their creative use of the basic crepe is inspiring. These paper-thin crepes become the lining of a plate for a delicious salad or the wrap for a more traditional crepe. One of our visits revealed the crepe as a sort of quiche-like crust for a savory crumble with tomatoes, olives, anchovies, olives and onions. It has become a place we visit weekly in hopes of working through the entire menu.
Favorite Dish: Thus far, my favorite dish was the Galette Toulousian. It was a crepe filled with sausage, carmelized onions in a sauce of creme fraiche. My wife is more partial to the salads, which include delicious chicken livers, tomatoes, walnuts and lettuce with a mustard vinegarette dressing. All very reasonably priced
