Cheese Pie -- Tyropita

Ingredients: *1/2 kilo / 1 pound of Feta cheese, either whole or in pieces *4 tablespoons butter or margarine *6 eggs (or 3 eggs) *1/2 cup chopped parsley *Pastry called Filo composed of very thin pastry sheets *3 cups of white bechamel sauce (optional) *Salt, pepper, nutmeg **************************************************This dish can be done in triangle sized chunks. After you butter the fillo and you put the filling in it, fold it in single triangles and place them on the oven dish.Crush the Feta to a paste, add the bechamel sauce, and the eggs, while stiring well. Add the salt, pepper and nutmeg. Line the baking pan with oil, and then place about 6-10 sheets of filo, buttering them on each side. Pour the batter and flatten with a spatula. Then continue with the rest of the filo sheets (should be about 20-25 in a package). Trim the edges and with a sharp knife, outline the serving...

Learn a few words

Maybe it's because I'm a Greek American, but it really disgusts me, how many tourists come to Greece, from all over the world, and don't even TRY to speak even a few words of Greek (please, thank you, hello, etc) Yes, it's a very difficult language, and i don't come close to being fluent, but I certainly try. Before you come, learn a few phrases, and bring a phrase book. You'll be surprised what doors it opens. The Greek people are very encouraging when you try to speak their language.

Eating & Sleeping

There is a period where they close the shops from 2-4 to sleep. How weird is that? So don't expect to go shopping in the middle of the day!They also tend to eat very late. 11:00 pm was dinner time which really was causing my body to gain weight!! No wonder the women are heavier set!!! I gained 8 pounds when I came back to Canada. Eating late than sleeping, not a good combination unless you want to be a sumo wrestler!

Athens is a busy city, smokey, crowded and filled with people. The mentality is more open and updated.Crete is a very traditional island, where customs, family are of very great importance. Things also move alot slower in Crete, it reminded me of when I was in the carribean. You have time for friends, for coffie, you work at your own pace, somebody tells you meet you at 11 that could mean 1 in crete time!!

The place I was staying(Crete) is probaly the most traditional place in Greece. If you want to understand or observe the greek culture. I think Crete is the best place. There are many women wearing black with the cross dangling from their neck to represent the death of their husband. The greek people I think have hearts of gold even though they come across with attitude. They are not shy to curse you out in greek if you ask them a question but they still end up helping you. Don't get offended that is just the way it is.Don't ask a greek man if he liked "Big Fat Greek Wedding" they seem offended by the movie. Crime is not very high and it is an insult to them if you think they swindled you out of money.
