The “kalathaki” cheese variety originates in the island of Lemnos. It is worthwhile to taste and purchase it. Protected by an appellation of origin, it has won fans worldwide.
It is a white cheese, round in shape and soaked in brine. It has small holes filled with droplets of fat. It ripens in a basket crafted from chaste tree stalks that leave an imprint on the surface of the cheese. It is made from sheep’s milk or a mixture of sheep’s and goat’s milk.
