Kilkenny Design Centre, Kilkenny
Highly recommended one-stop shopping (much of it duty-free) for Irish crafts: glassware, pottery, woolens, linens, local stoneware, jams, jellies, stationary, etc. Excellent selection and helpful staff, immediately across from Kilkenny Castle in a converted stables.
After we walked around the castle grounds, we went across the street to a craft market place which had a cafeteria and ate lunch. Afterward we wandered through the design center, but we didn't buy anything. Apparently some of the artisens work in shops in the courtyard in the back, but we didn't go there either.

Across the street from the Castle, the design center includes local made crafts, including sliver, gold, pottery, and much more. There are several buildings, each with a different craft. The crafts are pretty expensive, though.
Don't miss this shop once you're in Kilkenny! It's situated just across from Kilkenny Castle - so after a lovely 45 minute tour guided walk through the rooms and halls of the castle, you can visit the shop too. In fact, the premises you will see once were the stables of the castle. Today, apart from the shop, there you can find workshops, where local craftsmen produce wonderful vases, plates, mugs, jewellery...
Lots of irish goods like clothes, celtic jewellery, scarves, coats, etc by local designers. There is a branch in Dublin too.
What to pay: Loads!
