    You can buy this wonderful stuff from farms by the roadside, in small shops or supermarkets. It is usually behind the deli counter. It is geographically protected and the best stuff comes from Campania.

    What to buy: Just ask for mozarella and make a shape with your hands at the size of ball you want. A piece the size of a softball will cost about three euros. They'll fish it out of a bucket for you and bag it with some of the cheese water.

    When you cut the ball and start slicing it you'll see the milk start to ooze out. It tastes divine.

    I don't think it travels well, so although you can buy it in the UK at extortionate prices it won;t taste as it does fresh in Campania.

    What to pay: Two to four euros for a ball.
