The shop of Ettore Forte, at the crossing between Via Pierino Belli and Vicolo del Pozzo sells too fresh and preserved truffles. We have not checked it but it seems OK, though it seems to have less choice than Ratti.
For those that like sweets, this the place to visit. They have, of course white truffles, made of white chocolate and black truffles, made of brown chocolate ! They have plenty more.sweets but as that does not interests us, I cannot tell more..
The shop of Elio Ratti stands in Via Vittorio Emanuele. It is a small shop where they sell not only truffles but also other local foods such as home made Tajarin, a kind of Tagliatelle but narrower (1-2 mm instead of 4-5 mm) and which fir perfectly with white truffle. They sell also white truffle paste and oil aromatized with white truffle aroma. We felt that they were more sympathetic than at Morra's.
White truffle, Alba's truffle (Tuber magnatum Pico) is harvested from September to December. The epidermis is pale ochraceous. The inside is beige marbled with white. It is associated with poplars, oaks, etc… It has a penetrating, faintly garlicky aroma, with an intense flavour. It is the more expensive of all truffles. It can weight from a few grams to one kilogram and more.
The largest specimen of white truffle found in modern times was found in 1954 in Italy, in the district of San Miniato in a village called Balconevisi (other documents say San Miniato d'Alba). It weighed 2,520 grams and was donated to the President of the United States, Dwight Eisenhower (other documents say Harry Truman) by truffle trader Giacomo Morra from Alba. This draw international attention on the white truffle from Alba, that, until then, was mostly appreciated within Italy.
The shop "Tartufi Morra" was then the first white truffle trader in Alba. There are now several of them. For more on white truffle, look at my Livade page.
