A local food specialties is called "Moeche". It consists in a small crab that use to change its shell twice a year. It is a real metamorphosis as, by the time they grow the new shell they are about twice the previous size.
Right in this moment, when the crab have lost its old shell and not yet produced its new one it become a tasty and delicious meal as they serve it fried.
Before you enter in Chioggia, coming from the "Statale Adriatica" road you see on the left lines of poles holding the boxes they use to grow this crab and, if you are lucky to be around at the right time of the year you can see those guys selecting crabs to choose the ones that are changing the shell to bring those to the restaurants. It is truly delicious.
