Luggage and bags: If travelling by vaporetto for a day visit, you'll just need a light day sac to carry your camera, guide book snack and drink etc. The day that I visited (Christmas Day) the vaporetto was very tightly packed
Clothing/Shoes/Weather Gear: Comfy shoes, a warm jacket or coat. sunglasses.
I was also glad that I had my scarf and gloves-out of the sun it was quite chilly
Toiletries and Medical Supplies: Bring all essential medication with you - there are no pharmacies (or shops) here.
Also lip salve, moisturiser etc.
Photo Equipment: As much as you can carry - some quite atmospheric shots are possible. Again, no shops so come prepared
Miscellaneous: Food and drink - (There are restaurants on Torcello, but not cheap - I only saw 1 open during my visit.) so grab a sandwich /slice of pizza/ fruit/nuts/chocolate etc in Venice or Murano
Binoculars for views over to other islands/ wildfowl etc
