Hi Tango
I recently visited Malta with my GF and can say it is genuinely one of the most romantic beach locations. Valletta, Mdina and the 3 walled cities seem as if they were put in a time capsile and remain in another era.
Anyways, coming to your questuion about pre-booking tours - there is an online tours and activities company who I booked with.

They have some real Malta professionals and their service and quality were impeccable. I can safely say they were a large reason for making my trip very memorable because whatever I booked, was executed falwlessly.
I hope your son and his wife have the same experience. You can go directly to their Malta tours page where you can find a range of activites from USD 38 to USD 400.

From Mellieha you can easily reach some of the most beautiful places of the isle of Malta. In 10-15 minutes on foot, going down hill, you reach Mellieha bay. In Mellieah bay you can, if you want just have your towel and stay on the sun or, (as i made) rent sunbeds and umbrella. It's not expensive at all (expecially thinking at the prices of Italy): about 10 Euro for all the day. There are bars where you can drink and have some food, so the facilities, even if essentials, are good enough. The sea is really beautiful and it's a sand beach so it's good if there are children in family. Still on mellieha beach there are some facilities for sea sports so there are many things you can do on the beach:-)
I suggest for comeing up in Mellieha (or everithing else) to get the bus 'couse going down to the hill for reach the beach it's easy but returning back...well...it's hard, believe me

Go. Go to Mdina. It's a beautiful city-fortress, used to be the capital of Malta. Bus travel is easy, just get to Valletta and you can get out easily. The surrounding area is beautiful, but go into the city and it's just gorgeous. Lots of things to do there, restaurants, etc but it's also nice just to wander through the cool stone streets and marvel at it all. There is a particularly nice cafe/restaurant on the east side as you enter the town, can't recall the name but head to the upper level and you get a fantastic view over the countryside, which is unparalleled. Sit and have a drink with the cool breeze ruffling your hair.

Mention you're going to Malta and a lot of people will stare at you blankly and say 'but there aren't any beaches there, it's all rocky'. Well, that's what happened to me, anyway. The short answer is that they're wrong, although Malta is rocky there are at least two fantastic beaches.
One is the Golden Bay beach, and it is huge. Even when there are a lot of people there, it doesn't seem like a lot. You can go a long way out before it is very deep. The only thing is that it's got a lot of seaweed and some crisp packets! And the waves are tremendous. Lots of fun jumping around in them.
The second beach is Mellieha, and it is so worth the vist. You know all the holiday brochure pictures of beaches with clear white sand and turquoise water? They took those at Mellieha. Again, it's shallow for a long way out. The only thing is that it is very popular so there are lots of people. But it's not too bad even with that. You can buy some goggles and go for a swim to see all the fish - the water is very clear.

Collectively known as the Three Cities, individually, the towns by the harbour are known by several names: Senglea/L-Isla, Vittoriosa/Birgu and Cospicua/Bormla. These cities suffered several damagesduring the WWII.
Senglea land was fortified in 1.551 by Grand Master Claude de la Sengle. The Maltese often use the area's earlier name, L-Isla, meaning the island. During the Great Siege of 1.565, Senglea was protected by Fort St Michael.
The view of Valletta from Senglea is fantastic.
Check the Travelogue section on my Valletta page if you want to see The Three Cities from Valletta.

Valletta is in the middle of a bay. On one side (on the right of Valletta), The Three Cities: Senglea, Vittoriosa and Cspicua; on the other (on the left of Valletta), Sliema.
These pics were taken from Sliema, enjoy the view.

Cospicua is the largest of The Three Cities on Grand Harbour opposite Valletta. It is known by its former name, Bormla. The city was renamed by the Knights of St John because of the brave (conspicuous) role played by its people during the Great Siege of 1.565. Most of Cospicua's shoreline is taken up by the older dockyard - an area now being restored, and developed as a marina. The city suffered many damages during WWII.

Vittoriosa/Birgu, is another The Three Cities. At its tip is Fort St Angelo, perhaps the oldest fortification on the Islands. The strategic position of both fort and city over the millennia has led some to call this area `the cradle of Maltese history'.

Safe Haven Gardens at Senglea Point, on the bastion-point served as a look-out post to guard the harbour entrance and also offers great views of Valletta.
The city is noted for its superb harbour views across to Valletta from Safe Haven Gardens at Senglea Point. The stone vedette, known as il-Gardjola, on the bastion-point served as a look-out post to guard the harbour entrance. The sculptured eye and ear above its windows are symbols of vigilance.

The perfect place to stay in Malta is St. Julians. There are many bars and restaurants and very nice hotels, but it is not too busy and touristic.
