There are just too many restaurants in Amsterdam. In the center you will find the well-known fast food chains represented amongst a lot of others. If you are looking for more world-food places go to the Albert Cuyp area. Some links:

At this website (also in bookform) you can find all restaurants in Amsterdam with reviews and prices.
Simple, check what you want to eat, click and choose your place. Or, i am stayin in Leidsesquare area, where is that one italian place that serves real italian food.
Site provides links to local websites and phonenumbers if you need to make reservations. Please do when you want to avoid dissappointments. No need to make reservations at the "touristy" places but for other restaurants it is worth the effort.

At the top of the food chain in the Netherlands are the restaurants affiliated with the Alliance Gastronomique Néerlandaise. Their web site is here http://www.alliance.nl/. A restaurant on this list will give you the best that the Netherlands has to offer. Only 39 restaurants in Holland and Belgium have qualified for membership here, so if you want truly good cuisine, visit some of their participants.
Another highly esteemed group is the Relais du Centre. Their web site is here http://www.relaisducentre.nl/
Restaurants that belong to this group are at the top of the food chain and will surely give you the best Holland has to offer.

This site will tell you everything you wanted to know and more about restaurants in the Netherlands. You can look up an area, a cuisine etc... I use it all the time.

In many stores, you can buy a great restaurant guide for about 10 euros. A website goes with this guide: www.iens.nl. Definitely recommendable for choosing restaurants. The Amsterdam guide is sold in Dutch as well as English, not sure about the other cities.
