There isn't a great choice of vegetarian eateries in Oslo, or Norway for that matter...
The sole exception in Oslo is Vegeta Vertshus in downtown Oslo. Confusingly, it still carries its old name "Frisksportrestauranten" outside. Old habits and names die hard. Indeed - it started in 1938!
The whole range of vegetarian foods are available here, including the availability of fully vegan meals. Of 2006, Vegeta has joined an international chain of vegetarian restaurants, so they are becoming part of a supply chain enabling greater variety.
There are snacks varieties, a range of salads, a la carte dishes, buffets, drinks and desserts.
Quite cheap compared to the regular range of restaurants...
Favorite Dish: I remain a pasta fan and most stuff with pasta is good. Also filled bell peppers, squash dishes are good here.

if you have ever been in an italian university canteen, you have learnt how to heap food on your plate and it was good to have such experience when in this place because you pay for the plate dimension and you can put on it all you can eat ;-)...

A vegetarian meal makes a change from fish - but please do not feel I need any instruction on the virtues of Norwegian fish dishes! Also it is reasonably cheap.
