Rassolnik is a traditional Russian soup made from pickled cucumbers, pearl barley and pork or beef kidneys. The key part of rassolnik is rassol, wish is a liquid based on the juice of pickled cucumbers with some additions.Rassol is famous is Russia for its usage in anti-hangover treatment also.

Like almost anywhere in Europe also in Russia the posh restaurants will be very expensive and not always worth the pay. However, I found out that some small restaurant and coffee shops served very good food as well as provide good service. Also English is much more common these days with the young people in the big cities.

Many restaurants include every little item on the menu. Don't forget to check this and order what's necessary. For example, your breakfast may not come with toast. Make sure you order bread; make sure you specify 2 slices; make sure you specify toasted. Be sure to include salt and also pepper in your order, if you need it. Specify ice in drinks. Remember to add sugar and milk/cream to your order for coffee.

Although the food was very basic and each day was a variation of the last - the food was very good, wholesome and filling. We had 4 course breakfast, 4 course lunches and 3 course dinners, all beautifully presented. The waitresses get quite upset if you do not eat it all!

My favorite restaurant definitely was on the Transsiberian train from Moscow to Irkutsk in 1994. The restaurants are private enterprises, so it really depends on the crew. The crew of the 1994 transsib restaurant were so friendly and made the most delicious menues out of very simple ingredients. And after a look into their kitchen I was even more surprised at their efficiency and quality of food!
