Typical mallorquin pastry. It can be one big Ensaimada or small ones. And they can be stuffed with all sorts of fillings. Just try them out. I love them and even asked friends and collegues to bring me one whenever i found someone going to Mallorca. And i can remember me flying back with 3 boxes of Ensaimadas stacked as hand luggage and getting very strange looks from fellow passengers since i was the only one to bring them along.

• 6 egg yolks
• 3/4 cup white sugar
• 1 pkg dry yeast
• 1 cup milk
• 1 cup water
• 1/2 lb. butter
• 4-5 cups all purpose flour
Directions: In a mixing bowl, place the dry yeast, sugar, 1 cup flour and lukewarm milk and water. Set aside until the mixture starts to rise about 45 minutes.Separate the egg whites, beat the egg yolks into the mixture, blending very well. Add the flour little by little. If using a mixer, mixture should leave the sides of the bowl. Add the melted butter and set aside until it has doubled in bulk, about 1 hour.
Dust the board where the dough will be rolled out with a little flour to prevent dough from sticking. Divide dough into equal portions (12). Roll out each portion, brush with butter and roll into a long strip. Form into a coil, insert the inner end making sure it's tucked in, same with the other end of the roll. Butter top. Let rolls rise until they have doubled in size, bake at 375 degrees f.about 12-15 minutes. Brush with butter, sprinkle with sugar, and individually wrap each roll in waxed paper.
Preparation Time: 1 1/2 hour
Cooking Time: 15 minutes.
Try sobrasada. It is a typical sausage and is quite often eaten with hard, salty cookies. I don't remember the name of the cookies but just ask. You can find Sobrasada all over the island.

We just returned from Cala Millor resort and had been surprised to discover that practically noone was eating in the diners even as late as 9pm. Tourists and locals were mainly sipping on their drinks for the whole evening. But the meals are still available at any time of the day, so no shame in eating at the time convenient for you. Just don't be surprised if the diners are not full until later at night and that noone apart from you is eating.
Tapas, the Spanish snack comes in many forms cold or hot dishes or on bread. The beers in Spain are good seem to be mainly Estrella Damm, San Migel and Mahou.
