    There is very little tipping required in Vitoria. The taxi drivers turned down tips, as did the coat check lady at a disco. When I asked my friends how much of a tip to leave the hotel maid she said, "Nada." (none!)

    The cafes do accept a tip--a mere 10 percent...I could get used to this!

    Ham Hocks

    Most cafes have ham hocks hanging up behind the bar. Sliced ham is often found on many pinchos. Our friend tells us that their ham is salted, not smoked dry.
