Salsa Mojo: Canarian Gastronomy

  • "Mojo", a word probably of Portuguese origin, is the Canary Island term for their typical sauces or dips. Not all sauces are called "mojos", just the typical ones that are originally from the Islands, so, for example, there are no mayonnaise "mojos", that would be a sauce, but there is a coriander "mojo". The best known "mojos" are coriander - or green - "mojo", although the green colour comes from the parsley it contains, "colorado" - or red - made with lots of paprika, and hot "mojo", made from chilli pepper. These are the main "mojos", but there are others, including ones made with saffron and cheese and almonds.

    Try papa arrugadas with mojo souce.

  • "Gofio" is a flour that can be made from almost any kind of grain. It is toasted and ground to give a fine, wholemeal flour.

    There is also a "gofio" made from a mixture of wheat and corn. "Gofio" was the staple diet of the Guanches before the Spanish conquest of the Islands. They used mill stones to make it. Nowadays it is used as an added ingredient to many different dishes, and is now even being used very successfully to create new desserts and ice creams.

    It was always a vital staple when food was in short supply and was taken to the Americas by Canary Island emigrants. In 1990, the "Canary Island Gofio Producers Association" was founded, which has successfully promoted gofio and won it its own quality label "Gofio Canario".

    Patas de cerdo, ropa vieja, sancocho y potajes are very good! If you have a lunch before 4 o'clock try the menu del dia . It comes with two meal ,drink and desert or coffe. About 7 Euro

  • Cuasquias Live music Bar runs more than 20 years in Las Palmas. This venue always took plays in many festivals such as el Festival Imagina Rock, el Canarias Media Fest, el Circuito Insular de Cuentacuentos, la Celebración del Día Internacional de la Mujer Trabajadora, el Festival Internacional de Cine de Las Palmas de Gran Canaria. Many national and international important musicians played here. The place is emblamatic and must see for the night life.

    The Restaurant is closed on Sunday the rest of the days opens at 19:00 pm. The food is modern Canarian style and the house wine is very good and cheap. Our favorites are Arroz negro (rice cooked with squid ink), Costillas de cerdo . (1 bottle of wine and these two plates +tip cost us only € 25 !!)

  • If you like middle eastern food like a little bit spicy (but not hot like mexican) and home made style, I highly recommend El Cedro for a lunch or dinner. The restaurant at the second floor it has not a fancy but homey decoration. The service is very nice and the meal is very reasonably priced. For example today we had a family reunion of 13 people and paid 206€ +tip 10 %. We had 4-5 kind tapas and meat, rice, pita bread, desert, a lot of beer...

  • Hermanos (Brothers) Rogelio as you get from the name is a family business and They do Canarian style tapas. The menu is extensive and most of the dishes present available in half portions. Also dayly menus are available.
