Oven Pancake with bacon - Fläskpannkaka
Thursday is the traditional day for pancakes (and yellow pea soup) in Sweden. Instead of spending time frying individual pancakes in the frying pan, here is a delicious alternative. It can be made with or without baconFor one family serving (for about 4 persons) you will need the following ingredients: 2.5 dl baking flour; 1/2 teaspoon salt; 6 dl milk; 3 eggs; 2 - 3 tablespoons of margarine or butter; 200 - 300 grams of bacon or (salty) smoked pork (not sliced). Preparing:Set the oven thermostat at 225°C. Make the pancake mix. Dice the bacon into cubes of roughly 5 x 5 x 5 mm. Fry in a frying pan until they get a brown surface. Spread the bacon cubes onto a large oven pan, with an edge at least 2 cm high. Another alternative is to brown the bacon directly in the oven pan in the oven!
