If there's a Swiss cheese that should be tasted, it's Appenzeller cheese. It's a full-fat, semi-hard cow's milk cheese, selected and matured. The taste is strong and intense, and this is if you buy the regular Appenzeller cheese (the one with a silver paper on top. if you prefer an even stronger and more intense taste, go for the extra - it's the one with the black paper on top and its very spicy, extra-smelly and yummy. It's left to age for months in a cellar at 15 degrees, with a secret mixture of wine, spices and herbal brine. Needless to sar, your fridge will smell for days and days.
