Welsh rarebit

1 lb. American cheese
2 tbsp. butter
1 egg
1 tsp. dry mustard
1/2 tsp. salt
1/2 c. beer
1 tbsp. Worcestershire sauce
8 slices melba toast (or 4 English muffins, toasted)
Paprika for color

Put butter in double boiler with cheese which has been cut into small pieces. Stir until cheese is melted. Add the egg which has been beaten with the mustard and salt, continuing to stir and cook until well blended. Gradually add Worcestershire sauce and beer as you stir and heat until very hot. Serve over melba toast of muffins. Sprinkle with paprika.

This recipe was stuck on a wall in the kitchen... we never got to test or taste it however.. we are always interested in trying other culture's and country's culinary delights!

3 c. self-rising flour
1 c. sugar
1 c. butter
1 c. currants
2 lg. eggs
1 tsp. vanilla

Rub butter into flour. Beat sugar and eggs together. Add currants to flour. Add sugar and egg mixture to flour until it forms into a ball. Roll out on floured board. Cut into rounds with cutter. Cook on grill or heavy skillet (not greased) on medium heat, about 5 minutes on each side. Yield: about 36.
