As a people who rebuild their homeland after gathering from dozens of worldwide countries - we adopted and are adopting many specialties of Morocco, Romania, Iraq, Egypt, Turkey, Greece, Buchara, Georgia, Uzbekistan, Yemen.... and many more, you name them...You can find in Israel a large variety of dishes for every taste in the world, for every budjet, from popular 3 US$ FALAFEL and HOUMOUS in the street, up to most 'sophisticated' and luxury gourme' (~60 US$) meals.Israeli cuisine, definately, takes-off to the highest altitudes.... yet, the thousand years old basic arabic street's delicacies are IRREPLACEABLE. In my opinion, the best dishes are the appetizers and the HOUMOUS in oriental restaurants.
