2-3 eggs2 cups boiling water1 tbsp vinegarMornay Sauce 1 tbsp butter½ tsp paprikaA pinch of saltTake water and vinegar in a small saucepan and bring to a boil. Let it simmer over medium heat. Crack one egg making sure getting the egg as close as possible to the saucepan. If you crack the egg too high, it will disperse in water. Simmer over medium heat till the egg white hardens and gets white, for about 4-5 minutes. Transfer the cooked egg into a bowl of salty lukewarm water (see the picture). Poach the other eggs following the same way. Take all poached eggs into salty lukewarm water.Meanwhile, prepare Mornay Sauce. Click for the Mornay Sauce Recipe.Take poached eggs over a serving plate and pour the Mornay Sauce over.In a small pan melt butter and once it starts spitting stir in paprika and a pinch of salt. Stir in sugar and cook for additional 15-20 minutes or until it gets thick enough. Stir in lemon juice and turn the heat off.ENJOY

Peach Jam14 medium peaches, peeled7 cups sugar1 tsp lemon juicePeel peaches and cut them in cubes or any shape you like (not thin). Place one layer peach one layer sugar into a pot. Then keep in the refrigerator overnight. The next day bring it to a boil over high heat. Then, reduce the heat and cook stirring occasionally until it thickens (for about 35-40 minutes). Stir in lemon juice and cook for 1-2 minutes. Pour into jars or containers with lids.ENJOY

TAS KEBAB 5 Servings1 finely chopped onion1 kilo of lamb, cut into small pieces1 soup spoon butter1 soup spoon flour1 soup spoon salt1 soup spoon tomato sauce 2 tomatoes - peeled, seeded, and cut into small pieces5 glasses of water Keep these in a small bag of thin fabric:1 bunch parsley1 soup spoon of thyme1/2 soup spoon of pepper corns 2 bay leaves2 cloves of garlic Heat the butter in a saucepan and partially cook the meat in it for 8 to 10 minutes. Then add and partially cook the onions for 2 min. Add the tomato sauce and stir. Add the flour and stir again. Add the bag of spices, salt and water. Cook 15 minutes on a low heat. Add the tomato over the meat. Cook 20 minutes or longer. Remove the spice bag and serve.

KEBAB ON A CANAPE OF EGGPLANT - Saksi Kebabi 6 Servings 1 glass olive oil1 kilo of lamb cut into small pieces 1 large chopped onion 2 glasses water2 potatoes salt2 small tomatoes 2 soup spoons butter3 eggplant To Prepare the Eggplant:Cut the eggplants in half, lengthwise. Sprinkle with salt and let stand for one hour. Wash and dry them and then cook them in olive oil and place in a hollow baking dish.To Prepare the Meat:Brown the meat in a tablespoon of butter. Add a glass of water, salt and the chopped onion and cook. Before the meat is completely cooked add the potatoes which have been cut into slices. Fill the centers of the eggplants with the meat, tomato and onion mixture. Pour the rest of the sauce around the eggplant. Add a soup spoon of butter and water if necessary. Bake 15 minutes in a hot oven.

FOREST KEBAB - Orman Kebabi 4 Servings2 big potatoes 2 carrots 2 onions2 tablespoons of margarine500 g meat, cut into cubes Salt, thyme Place the meat, cut into small pieces, the onions divided into 8 pieces and the margarine and brown them until the meat absorbs its juices. Add salt and water. Simmer on small flame for about an hour. Skin potatoes and carrots, cut into pieces. Add carrots and later on potatoes, cook on medium flame. While serving sprinkle thyme on it. You can add peas, too, if you like. If you don't like thyme, you can add tomatoes or tomato paste instead.
