After a superb trek to see the white valley in the morning and after a delicious lunch an a small siesta you will be ready of an exciting horseback riding adventure.
If you are an experience rider you can freely ride -- as fast or as slow as you want. And if you have never ridden, the guide is there to teach you and help you and to take pictures.

There are many nice valleys around Göreme to explore by foot, valleys like Pigeon Valley, Honey Valley, Rose Valley and Love Valley. You can walk by yourself or with a guide, alone or in a group. Several pensions and tour agencies organises walking tours.
hiking is very good around goreme and you have several valleys with good hiking trails.
that is one very good way to see the rock formations and the hiking is generally not that hard.
the biggest problems might be heat and sometimes you might have a decent to the valley that is a little steep.
i have hiked there with tourgroups where people were well over 70 years old, so it should be possible for most though and it is one very good way to see the landscape.
Equipment: make sure to wear some footwear that dosen't slip easily as the sand can make the slopes a little slippy.
when in goreme you can also rent a quad bikd for a few hours and tour the nearby valleys.
several places in town rent them out and the hitch hiker bike rental shop also do quad bike tours in the afternoon where you tour the valleys as a group.
quite good fun if you are young and like an adrenaline rush.
Probably the est way to explore the beautiful and bizarre landscape around Göreme is hiking.
The best time is spring or automn, as the temparatures are comfortable.
To be as independent as possible I would advise to hike there with a tent or if weather is stable enough only a sleeping bag can be enough.
If your into biking , well more than biking (in the numerous valleys) there is Biking festival in Cappadocia that has been held every july (12th - 15th ) Its real adventure though as long as your not clumsy...No matter your professional or not you can participate . You can go with a balloon over the wonderful Goreme Valley.
You can choose between a trip at sunrise or sunset.
I don't recall the prices but I'm absolutely sure they didn't fit my budget.
