Favorite thing: Go parasailing. You take a water taxi from the beach out to one of the speed boats used for parasailing - much safer than actually taking off from the beach, as I did in Cancun. They actually allowed these two ladies to parasail in tandem, which I don't think many places allow. (I don't know them, they were just on my boat.)
