One of the most fun activities in Cabo is to rent an ATV and take a ride out to the old lighthouse. There are a couple of ways to do it:
1. Rent an ATV by the hour and go yourself -- recommended only if you have some experience getting around Cabo and the outlying neighborhoods.
2. Go on a tour with an established agency.
I went with option 2 the first time out, and after that I just rented them on my own. The beauty of just renting them on your own is that you can then ride them around town and check out places you normally wouldn't go or wouldn't want to take a taxi to, like Pedregal, etc.
Most people take a ride through the village and head on out to the Old Lighthouse. There are sand duns out there that you can ride on and it's a blast. Pack a sandwich and something to drink and have lunch at the beach, or watch the sunset.

If you're on your way to the bus stop (see transportation tip) or just have extra time waiting for your ride to pick you up, walk across the hwy from the airport to the small palapa. Refreshments served :-)

Phone: don't think they have one
When you visit Cabo San Lucas, take the time to visit the non-touristy areas. It was a real eye-opener for me when I was there to see the poorer areas of the town and how little they had (materially).
Whenever I travel to countries other than Canada and the US, I always make sure I take at least one day to see the other parts of the town, it really puts the whole trip into perspective.
The best way to see these areas is either to walk, ride a bike, or sometimes, rent an atv or something of the like in order to cover more territory.

Hopefully your hotel will have one, it just happened that the last night we were there they had a big all you can eat all you can drink fiesta with a tequila walk at the end and as you can see from the picture...my boyfriend won the first bottle they gave away that night. I on the other hand took one single step....yep just ONE step, but thats ok, we brought home an enormous bottle of tequila which is fabulous! How did I get that picture your asking yourself?! Don't ask me, maybe I should take more pictures drunk from now on!
