    WATERFALLS BELOW EL EDEN RESTAURANT

    Ok. you have driven 40 minutes south of Puerto Vallarta, in the heat, down to Boca de Mismaloya when you turn left and head into the jungle on a road, if you can call it that, holes, rocks, dirt, iguanas, mules, one lane at times, till after the milk you had for breakfast has been churned into a smoothie inside your stomach, and then you reach this peaceful, beautiful location of jungle and waterfalls and a fast flowing river.

    El Eden Mexican Restaurant is at the end of a hot, dirty, and bumpy ride, but worth it. Just to sit in the open restaurant with a margarita in one hand and a five dollar bill in the other, so that you can listen to the ever present Mariachis play their worn out guitars as if they were in the greatest concert in the world, made it all worthwhile. This was what I envisioned south of the border, down Mexico way was like. Laid back and no cares in the world, watching the river water rush through the giant granite boulders, as the sounds of rushing waterfalls and the Mariachis music blended in with the aroma of warm tortillas and cold margaritas. Someone, please pass the chile peppers. Ole.

    Favorite Dish: The tortilla, so simple yet so wonderful to eat. Flour paste, rolled into a ball, slapped down into a flat press and presto, a flat round flour paste that is then heated in the fire oven till perfectly cooked. Now deep fry in oil till browned, pat dry, then snap apart into bite size chips, placed in a bowl.

    Take another bowl and add a little smashed avocado, with chopped tomatoes, chilies, and onion to make the Mexican guacamole. Or, as those that make the long, hard drive to get to this restaurant, you can just order the guacamole and tortilla chips at El Eden to go with your margarita (tequila, triple-sec, and lime juice, with salt rimming the glass) or that bottle of ice cold Dos Equis Mexican beer. Those of you that say, hey, that's only a starter are right. Many wonderful combination dishes are available that have the true flavor of old Mexico.
