We were taken on a rodeo by some locals. It was fun and it´s definately something really Mexican (a lot different from American rodeos). If you are interested in seing a rodeo you´ll have to find out when they are. But as far as I know they are quite frequent.
Visiting the top of the bufa is great, you can see all the city from there, you can buy souvenirs, you can eat there, too.
But also if you go a little bit more high you will see the mausoleo from some important people of the city.
Goitia Museum of Art
Its not at all "off the beaten path" but, it is NOT popular. I was able to roam the galleries alone and really feel as if I was in someone's private home.
