Vietnamese food in Fort Collins should only be had from Young's Cafe. A staple in the foothills region, Young's provides great service, with high quality food. If you're looking for something other than the standard run of Mexican restaurants and fast food joints, then go here! I swear you won't be sorry!

3 Margaritas has been around since I last lived in Fort Collins - over 8 years ago. I love it then and I continue to drop by when I have a chance. With the colorful atmosphere and excellent food quality, its a cute place to grab a bite to eat of authenitc Mexican.
As always, I'm a huge fan of the cheese and onion enchiladas. It comes with rice and beans and is frankly a ton of food! Although a touch out of the lime-light as far as Mexican restaurants go in Fort Collins, Inca Mexican is not to be missed. A very cute atmosphere with colorful walls and paintings.
The crab enchiladas were outstanding! Very tender and fresh REAL crab meat shredded into the corn coatings with red sauce. It comes with rice and beans and is quite good for the money. Cozzola's has been voted BEST PIZZA IN FORT COLLINS for over 12 years straight in the Coloradoan Reader's Poll, and rightly so. You can choose from three crust varieties, five different sauces and a multitude or toppings. This is not always a good thing since it makes it a little difficult settling on all the parameters if you are in a big group. The good news is that even with all the possible combinations it's virtually impossible to put together a bad pie. Their sauces are rich with flavor - reminiscent of the pizza back east. The Herb Crust and the Whole Wheat Poppy Seed Crust are both thick and bready like you might find in the midwest, while the Traditional Thin Crust is more like the New York style. They also offer some interesting combinations which makes ordering a bit simpler. The ambiance at the downtown store is casual, cozy and quaint - but looks a little bit dated. It's like a place out of the past - both in terms of ambiance and the quality of the food. I've always found the service to be top notch. The staff is friendly, and the turnaround time on a pizza is about 20 minutes. While waiting enjoy the local beer on tap or a bottle of wine - very reasonably priced, and listen to the mix of tasty tunes ranging from bluegrass to 60's jazz, to old blues, and some classic folk/rock. For the quality of pizza and the overall dining experience, the prices are very cheap. Two people can enjoy a bottle of wine, a couple of salads and some stellar pie for under $35, and cheaper still if you catch the specials during the week. My criticisms would be that they need to offer patio seating in the summer, need to expand their wine list, update the dining room a little and get a web site set up. Other than that I give it a five star rating. If you're visiting Fort Collins you should allocate a night to Cozzola's. They also offer delivery for pretty much the whole town.
My favorite combination currently is the Spinach Ricotta filling over a mix of Fresh Garlic and Sweet Basil sauce on the Traditional Crust and topped with fresh mushrooms and Italian Sausage. It's reminiscent of the stuffed pizza that you can find in Chicago. A quaint little restaurant in downtown Fort Collins. They have amazingly good traditional Indian cuisine.

Everyone in Ft. Collins the that the Rio is the place to go for margaritas, but I'd have to disagree! Inca has big, flavorful and strong margaritas that come in a few different flavors. The food is resonably priced and extremely tasty. The service is fast and friendly, and there's virtually never a wait for a table.
I always start dinner with a margarita. Lately I like the peach, frozen with sugar on the rim, but regular and strawberry are good too. The quesadilla's are huge and are perfect for sharing. I'm also a fan of the shredded beef chimichangas and the cheese enchiladas. I can't leave out Walrus Ice Cream, which has been a town staple for as long as I can remember. Not only does it have character and a plethora of flavors, but it's all homemade and they make a fun joke flavor every week.
I can't even say which ice cream flavor is best. The cool thing is, if you're watching calories you can still indulge-there's usually a fruitage or two on the menu that's made with just juice but still delicious! This is definitely the best pizza joint in town. Be prepared to wait a bit-I think the folks who work there tend to be stoners. The pick-your-own Stromboli's are awesome, perfect for a very filling lunch. A little bit pricier than some of the other pizza places in town, but you can definitely taste the difference. It's not a bank-breaker by any means, though.
I love the make-your-own-Stromboli because I'm a picky eater. There's a lot to choose from, between "normal" pizza toppings and more "gourmet" stuff like artichoke hearts and toasted almonds.
